Ingredients

  • Rice1 cup
  • Water2 cups
  • Beans1 can
  • Olive Oil1 tbsp
  • Onion Powder1 tsp
  • Garlic Powder1/2 tsp
  • Cumin1 tsp
  • Salt1/2 tsp
  • Black Pepper1/4 tsp

Steps

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the onion powder, garlic powder, and cumin, and cook for 30 seconds until fragrant.
  3. Add the rinsed rice to the saucepan and stir to coat with the oil and spices.
  4. Add water and salt, and bring to a boil.
  5. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
  6. While the rice is cooking, drain and rinse the can of beans.
  7. Once the rice is cooked, gently fluff it with a fork. Fold in the drained beans and black pepper.
  8. Let the mixture sit, covered, off the heat for 5 minutes to allow the flavors to meld. Serve warm.

Tips

  • Rinsing the rice removes excess starch, resulting in fluffier, more separate grains.
  • For extra flavor, you can toast the dry rice in the saucepan for a minute before adding the water.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
