Steps

  1. Preheat your oven to 375°F (190°C). Generously butter a 9-inch round baking dish or pie plate.
  2. Wash and pit the cherries, then arrange them in a single layer in the prepared baking dish.
  3. In a medium bowl, whisk together the sugar and eggs until pale and slightly foamy.
  4. Split the vanilla bean lengthwise and scrape the seeds into the egg mixture. Whisk in the crème fraîche, melted butter, lemon zest, and salt until smooth.
  5. Gradually add the flour to the wet ingredients, whisking continuously until you have a smooth, thin batter with no lumps.
  6. Pour the batter evenly over the cherries in the baking dish.
  7. Bake for 35-45 minutes, or until the clafoutis is puffed, golden brown, and a knife inserted into the center comes out clean.
  8. Let it cool for at least 15 minutes before serving. It can be enjoyed warm or at room temperature.

  • For a more authentic and subtly almond-flavored clafoutis, try baking it with the cherry pits still in. Just be sure to warn your guests!
