  • Flour1 cup

  • Water1 1/4 cups

Steps

  1. Make the batter: In a large bowl, whisk together the flour, sugar, and salt. In a separate bowl, whisk the eggs and water. Gradually pour the wet ingredients into the dry ingredients, whisking continuously until smooth. Whisk in 3 tablespoons of melted butter.
  2. Rest the batter: Cover the bowl and let the batter rest in the refrigerator for at least 30 minutes. This helps create more tender crêpes.
  3. Prepare the filling: While the batter rests, peel and slice the bananas.
  4. Cook the crêpes: Heat a non-stick skillet or crêpe pan over medium heat and lightly grease with butter. Pour about 1/4 cup of batter into the center, and immediately swirl the pan to spread the batter into a thin circle.
  5. Cook for about 90 seconds, until the edges start to lift and the bottom is lightly golden. Flip and cook for another 30 seconds. Slide the crêpe onto a plate and repeat with the remaining batter.
  6. Assemble and serve: Lay a crêpe flat, arrange a line of banana slices and a sprinkle of chocolate chips down the center. Fold the crêpe in half, then in half again to form a triangle, or simply roll it up. Serve warm.

Tips

  • For a perfectly smooth batter, you can blend all the batter ingredients in a blender for 20 seconds.
  • Don't skip the resting step! It allows the flour to fully absorb the liquid and results in a much better texture.
  • Control the heat of your pan. If it's too hot, the crêpes will cook too quickly and become brittle.
